Addiction to food delivery can be hard on both the waistline and the wallet. If you want to change your ways and start saving your cash then see below for five delicious, cheap and easy meals that are guaranteed to impress. You’ll even have extra to share or for lunch the next day.

Lemon broccolini and beans

This one couldn’t be simpler for a lazy Monday night. Grab some broccolini and steam it for a few minutes. Drain and rinse a can of 4 bean mix and stir through premade pesto and pumpkin seeds for a bit of crunch. Add broccolini and beans to a bowl and top with a squeeze of lemon. 

Ingredients

  •  1 x Bunch of Broccolini
  • 1 x Can 4 bean mix
  • 1x bottle pesto
  • Handful pumpkin seeds
  • 1 x Lemon

Cost - $5 each (feeds 2)
Preparation time – 8 minutes

Taco Tuesday anyone? 

You’ll have dinner ready in no time this Tuesday. Simply pop fish fingers in the oven, defrost some corn kernels and combine with a bag of premade coleslaw. Add ingredients to a warmed tortilla and top with a squeeze of lime.

Ingredients

  •  Frozen fish fingers
  • Bag frozen corn kernels
  • Bag pre-made coleslaw with dressing
  • Tortillas
  • 1 x lime

Preparation time - 15 minutes

Frittata surprise!

Got eggs? Then you’re half way to making frittata. Take 6 eggs and whisk with a splash of milk, whatever herbs and spices are in the cupboard and a handful of cheese. The surprise? Frittata goes with everything so throw in any veg or meat (If potatoes are raw cook them up in the microwave first), pour the mixture into a non-stick pan and bake in the oven at 180˚celcius for 25 minutes.

  • Splash milk
  • Handful cheese
  • Herbs and spices to taste
  • Any veg or meat you have on hand

Insalata di tonno e fagioli 

It might sound fancy but this dish is the easiest dish of them all. Simply drain and rinse a can of cannellini beans, add canned tuna, chopped red onion and parsley, and stir through your dressing of olive oil, lemon and salt and pepper to taste. For something different add cheese and tomato on the top and put under the grill.

  • 425g canned tuna
  • 1 x red onion
  • Bunch parsley
  • 1 x lemon
  • Olive oil
  • Salt and pepper

Preparation time – 5 minutes

Cheesy herby penne

Need some comfort food – then this dish is for you. Combine ricotta, fetta, lemon peel, basil, mint, parsley, salt and pepper in a bowl. Cook penne pasta in salted water and when done save 1/3 cup of the pasta water. Combine cheesy herby mixture with pasta, add the chopped tomato and stir through enough water to coat the linguine.

  • Ricotta cheese
  • Fetta cheese
  • 1 x lemon
  • Bunch basil
  • Bunch parsley
  • Bunch mint
  • Salt and pepper
